yummy baked chicken served with roasted sweet potatoes and onion with a fresh green salad
Roasted or baked chicken is such a favourite of mine. It’s usually pretty cheap, it doesn’t take much for it to taste amazing and you can keep the bones to make stock! Yay!! Even If I’m not having a whole chicken (like for this recipe, where I used the super juicy thighs), I just collect together the little bones, freeze them and keep adding to my stash until I have enough to boil up for a good old bone broth. Win-ning! Continue Reading
Meat and 3 Veg Meatballs
I love making meatballs, they are so easy to batch cook and great to eat for breakfast, lunch or dinner. And these little babies are my new favourites! Not only are they a delicious way to get extra veg into your meal, they also pack a great anti-inflammatory punch from turmeric, garlic and ginger.
Easy Peasy Chocolate Milk
I’ve been able to reintroduce raw cacao into my diet! I know – exciting!! After 5 months with no chocolate it’s been really nice to get that flavour back – plus the antioxidant hit that raw cacao gives. If you’re following the autoiummune protocol (AIP) and haven’t added raw cacao back in yet you can easily sub carob which has it’s own health benefits, including being a rich source of phosphorous and calcium. I’ve recently returned from a 2 week road trip spent visiting friends and checking out a couple of places we haven’t stopped at before – it was awesome! There’s just something about road trips that gives me a real sense of freedom – and I love that! We were also catching up with some friends who we hadn’t seen in quite a while and that’s always good fun too 🙂 Continue Reading
Check out this great new e-book!
My biggest question when I decided to start the Autoimmune Protocol was, seriously, “but what will I eat for breakfast?”. And it’s really hard to think outside the (cereal) box when we’re so used to eating grains! For me, breakfast would usually be would be toast, porridge, or muesli, a couple of boiled eggs, or yoghurt with berries and nuts (yummm….still missing that one). On AIP we can’t have any of these things! So what do we eat? Continue Reading

One thing I hear very often is “I want to start the Auto-Immune Protocol but I don’t know where to start!” and I remember the horror I felt when I read about the protocol for the first time. Seriously, what sane person cuts out cheese and wine and chocolate?! Well, I guess the kind of person who has had enough of feeling like crap and doesn’t want to just keep increasing the medication whilst getting more and more ill. So that means me – and quite possibly you! Continue Reading
