Well, I’ve completed my first week of the AIP diet and I must say, it’s really not easy! Hats off to the many people that manage to keep this diet up for many months, and even years! So far I have been lucky and haven’t had any “detox” symptoms like headaches or anything, I think it’s because I’ve been off added sugar and processed foods for quite a while. Hopefully I’m not speaking too soon! The tricky part for me has been the organisation of following this diet. I can’t just grab something so if I don’t want to go hungry I need to have ready-to-go, cooked food to hand at all times. First world problems, hey. Continue Reading

It’s the colour of the leaves on the trees and covering the pavements, of oranges and mandarins and clementines that really come into their own during the colder months…..and of course fat juicy pumpkins!!!! What am I doing? Sunbathing my mushrooms to increase their vitamin D levels of course (is that weird?!)!
Studies show that putting mushrooms in direct sunlight increases the amount of bioavailable vitamin D2 in the mushrooms and that this is as effective as the same amount of vitamin D2 or D3 taken in supplement form in raising blood vitamin D levels. Continue Reading
