My biggest question when I decided to start the Autoimmune Protocol was, seriously, “but what will I eat for breakfast?”. And it’s really hard to think outside the (cereal) box when we’re so used to eating grains! For me, breakfast would usually be would be toast, porridge, or muesli, a couple of boiled eggs, or yoghurt with berries and nuts (yummm….still missing that one). On AIP we can’t have any of these things! So what do we eat?
Personally, my saviour was bacon! And I started adding that to chopped up sauteed / steamed chopped up veggies like kale, mushrooms, carrots, etc, and that was a great staple for me that was easy to make and could be adapted for whatever was in the fridge. ?My other saviour, which I loooooove for the Winter, was my version of pumpkin “porridge”. So delicious and warming and spiced and just mmmmmm….
