What with it being Valencia orange and passionfruit season here in Australia, I thought what better way to use these delicious ingredients than to make some yummy gummies! They taste like sweets, but they’re good for you 🙂
I try to get gelatin in my diet on a regular basis for it’s healing properties. If you’re interested in learning why gelatin is a good thing to eat regularly, read this post from Chris Kresser’s website (it caused a bit of a fuss….can’t think why!).
Now you understand why I’m in love with gummies! I really like this recipe for Sweet and Sour Gummies from Diane San Filippo at Balanced Bites? and I’ve made it quite a few times (love the blueberry version!) but felt like trying something new….
So I was having a read through some of my favourite blogs and came across this recipe for?Tangerine Gummies?that Sylvie from Hollywood Homestead?shared on Katie the Wellness Mama‘s website.
I had oranges, passionfruit and some windfall lemons from our tree, so I thought I’d use those to come up with a seasonal and delicious gummy.
Ingredients:
1 cup orange juice (approx. 2 oranges)
2 passionfruit
Juice from 1/2 lemon
7 tablespoons gelatin (I use Great Lakes)
Method:
Add orange and lemon juice and passionfruit pulp to a small saucepan
Gently warm on a low heat (warm enough to dip your finger in and not burn yourself)
Add the gelatin
Blend together with an immersion blender making sure there are no lumps of gelatin but not breaking up the passionfruit seeds
Pour into a container
Set in fridge for approx. 20 mins
Peel set gummy mix out of the container and chop into bit sized pieces
Keep in a sealed container in the fridge
I imagine these would keep for a week or so in the fridge but a batch this size doesn’t last me that long, so I can’t be sure! I think it’s best to gobble them up ASAP and make a fresh batch the following week.
